This week’s meal plan is filled with healthy, nutritious dishes for you to make this week. Enjoy your summer and simplify meal time!
It’s been a really long week for me. My youngest ended up getting 10 stitches in his eyebrow last weekend. He’s totally fine now, but that’s the problem. He can’t go to the pool or do ANY physical activity for another week. And he feels fine. See where I am going with this?
You see, my little guy is no stranger to getting stitches. In fact, this is his 4th time getting them (and he is only 6!) One time he got them in his chin and he PULLED THEM OUT HIMSELF! Isn’t that so gross? Back to the plastic surgeon we went…time to get restitched!
Another time he got 37 stitches in his chin (about a half inch above the last one) and the second day he fell flat on his chin and guess what? He opened them up. Back to the plastic surgeon we went again…yup, restitched.
This time, I just want to keep him in a bubble. I am constantly telling him to stop jumping off the bed or stop hugging your brother that hard. Side note: Why do they start in a hug and end up wrestling each other to the ground?? I don’t get it?? It is really hard not to do anything when you are an extremely active 6 year old boy. Moms of boys will totally understand.
And that is why it’s been a really, really long week.
I needed some serious help with the meal plan and I will need some this week coming up.

Monday
Healthy Chicken Salad from Lauren Kelly Nutrition.
Prep Ahead: Chop vegetables and apple ahead of time.
Tuesday
Grilled Pork Chops with Spicy Cherry Plum Salsa from Flavor the Moments.
Prep Tips: This meal comes together very quickly so no prep ahead is necessary! Serve with a side of rice or quinoa!
Wednesday
Harissa Chicken Skewers with Herbed Yogurt Dipping Sauce from greens & chocolate.
Prep Ahead: Prep the harissa and yogurt sauce in advance. You can also marinate the chicken in the harissa a day in advance. Serve with grilled veggies.
Vegetarian Option: sub vegetables like mushrooms, zucchini, summer squash, red onions, and peppers for the chicken.
Thursday
Grilled Teriyaki Chicken Bowls from Spoonful of Flavor.
Prep Ahead: Chicken may be marinated in advance, and the veggies and pineapple may be prepped ahead.
Friday
Summer Quinoa Salad from Hip Foodie Mom.
Prep Ahead: Prep the day before by chopping and dicing all of your vegetables in advance. You can store them in sealed zip top bags in the refrigerator until ready to use.
And let’s not forget the incredible grocery list that keeps me sane and organized.

Sigh. Such is the life with boys in the house! I laughed at the fact that your plastic surgeon sends a Christmas card because our orthopedist sends us one! I’m loving that healthy chicken salad.
Oh no about the stitches!! But I’m glad he’s feel better! Hope he’s all healed up soon! I know missing out on summer actives stinks! mmm and those Harissa Chicken Skewers are happening asap!
