Another week of healthy, seasonal dishes that are easy to make and packed with flavor. Meal planning saves time and takes the guess work out of what to make for dinner.
I have a confession to make…
I barely made dinners last week. I mean, of course I put something together to feed my family, but they weren’t “real” dinners, you know what I mean? One night was leftover barbecue chicken. That’s acceptable, right? I love leftovers, we just rarely have them here because everyone eats so much! Another night we had tacos. Thank goodness for tacos! They are so easy to make and everyone here likes them ( I love when that happens!) Then the rest of the week went downhill… we had baseball every night (sometimes more than one game) and I wasn’t organized. I barely had any food and I had no time to get to the grocery store! Pancakes for dinner everyone!!
So this week, I am getting organized (again!) Starting tomorrow, I am planning what we are eating this week and better yet, I am going to make sure we have all of the ingredients here! No. More. Excuses.
Let’s kick off this week’s meal plan with these awesome looking quesadillas…
Monday
Peach Caprese Quesadillas from Flavor the Moments.
Tuesday
Creamy (No Cream!) Corn Chowder from greens & chocolate.
Prep Ahead: You can chop the veggies and cook the bacon in advance. This is a great recipe for fresh sweet corn!
Wednesday
Lemon Garlic Shrimp from Spoonful of Flavor.
Meal Tips: Enjoy as a meal on its own or serve with a side of fresh or steamed vegetables.
Thursday
Strawberry Salad Tart from Hip Foodie Mom.
Prep Tips: Make sure your puff pastry dough is defrosted ahead of time. I like to place mine in the fridge overnight and I simply use it the next day.
Friday
Roasted Vegetable Turkey Frittata from Lauren Kelly Nutrition.
Prep Tips: Cook turkey (or chicken) ahead of time or use rotisserie chicken.
I may be a little biased, but that frittata is out of this world. I have made it with rotisserie chicken, without any meat and with the turkey and they were all delicious!
Ok, let’s not forget our handy grocery list ( and make your life just that much easier!)

I’m not a great meal planner anyway, but the heat of summer has really thrown me off. I find myself scrambling for something last minute daily! Love these ideas.
