Where did this week go? I can’t believe it’s already May tomorrow, time needs to sloooooow down.
I am loving this week’s meal plan. I think I am starting with the Sweet Potato Black Bean Pasta! Or the Pasta Primavera? Or both!
Monday
Pasta Primavera from Spoonful of Flavor.
Prep Ahead: Feel free to substitute any of the vegetables for ones you prefer or have on hand. Prep and chop vegetables in advance to save time.
Tuesday
Creamy Sweet Potato and Black Bean Pasta Skillet from Cook Nourish Bliss.
Prep Ahead: If you use store-bought sweet potato puree, this meal comes together in about 30 minutes! If using homemade puree, make it in advance to save time.
Wednesday
Healthy Mexican Bean Salad from Lauren Kelly Nutrition
Prep Ahead: This is already vegan and can be prepared ahead of time so the dresisng can marinade.
Thursday
Easy Italian Salsa Verde Shrimp from Flavor the Moments.
Prep Ahead: The sauce is best the day it is made but the ingredients may be prepped ahead of time. For vegetarian option, substitute the shrimp with white beans or stir fried veggies.
Friday
Havarti and Mushroom Flatbread from greens & chocolate.
Prep Ahead: There is no need to prep anything in advance – this comes together very quickly!
Serving Suggestions: serve with a side salad.

I’m loving all the fresh spring flavours in this week’s plan! I have to admit, though, I can’t see myself waiting for the end of the week to make that flatbread. That would be my dinner on Monday… and Tuesday… and maybe Wednesday, too… (I have a seriously willpower issue when it comes to cheesey bread. Sigh.)
You’re Mexican salad is something I will make today for lunch (I have all the ingredients on hand). I think that these are fantastic ideas to make any day of the week!
What a great looking meal plan! I went grocery shopping yesterday with no plan at all. I sure missed not having my meal plan and list made out, It always takes twice as long!
