Delicious Seafood Paella, Sweet Potato Black Bean Corn Enchiladas and Thai Peanut Chicken Noodles are just a few of the delicious recipes on this week’s meal plan.
Man this was a long week.
Doesn’t it seem like holiday stuff starts so much earlier these days? People put Christmas decorations and they play holiday commercials way before Thanksgiving! It’s only December 3rd and I feel like Christmas should be next week!
I am taking a little poll: how many of you have your Christmas trees up already? I decorated my house (but it’s still a mess!) but no tree until next weekend.
I am so excited for the holidays but I just wish things would sloooooooow down a bit. And if I am going to start wishing for things, I wish my kids would stop growing up so fast and maybe my house was clean. ๐
Let’s just hope I get a little more organized and have a large dose of some holiday cheer.
You know what makes me happy? This week’s meal pan. All of these meals mae me ridiculously happy. You will see why…
Monday
Seafood Paella from Hip Foodie Mom.
Tuesday
Kale Bacon Manchego Pizza from Lauren Kelly Nutrition.
Wednesday
Sweet Potato Black Bean Corn Enchiladas from Flavor the Moments.
Prep Tips: The enchilada sauce and the filling may be made in advance, and the whole meal may be assembled ahead of time so all you have to do is pop it in the oven!
Thursday
Thai Peanut Chicken Noodles from greens & chocolate.
Prep Tips: You can make the sauce in advance.
Friday
Easy Chile Rellenos Casserole from Spoonful of Flavor.
Prep Tips: You can prep the entire recipe in advance and then store in the fridge until ready to bake.
I love a good casserole and I can’t wait to make this chile one!
This wouldn’t be complete without my handy, dandy grocery list…
Have a great weekend, friends!
2 trees inside, 2 trees outside, and garland and lights galore! We love Christmas ๐ Thanks for another yummy meal plan!
I want to eat at your house everyday!
I’m drooling between that Paella and Chile Relleno Casserole – OMG YUM
We haven’t gotten our tree yet, probably next weekend. Everything looks delicious as always!
Our tree went up like Nov 5th… lol!! We love decorating for christmas and want to enjoy it more than 2 – 3 weeks. Sooooooooo…. up it went. Stockings are full. Presents are wrapped. All that’s left to do is… RELAX. ๐ lol. PS. I can’t wait to make the sweet potato black bean corn enchiladas. YUMMATOLA.
My answer is pretty much the same as Kelly! My tree has been up since before Thanksgiving. Christmas is my favorite so I like it to last as long as possible. Lol. Oh, those enchiladas need to happen soon!
The kids put a fake tree up a couple weeks ago, and next weekend we do the real tree. Christmas is a month long celebration these days. I have friends who start shopping in September, which is nutty to me. I can’t even manage planning a week of dinners (thank goodness for menu plans like this!) let alone plan that far in advance for gifts!
I can’t wait to put up our tree!
My tree is up! haha mine had been up since like the second week of November! I had a rough beginning of the month and was out of town and when I got back my hubby had gotten the tree out of storage and put it up for me. MMMM your meal plans are always so awesome! I love that Seafood Paella and Sweet Potato Black Bean Corn Enchiladas!!
We have ours up – the earliest ever for us! Yay. ๐ And these dishes all look so delicious!
Tree is up and ready to go! WooHoo! Love a good meal plan!
These all look good but I am lovin that seafood paella and the Thai noodles! Can I have dinner like this every night?!
Hi Lauren, This is the best week ever, 12.3.16 but I can’t get the recipes to print or come up on the screen, I get the ingredients list in the weekly form but can’t open anything for the full recipes. Suggestions please.
