Roasted Autumn Squash Soup and Ratatouille Lasagna are just two of the warm, comforting, healthy dishes on this week’s meal plan! Who’s coming over?
It’s a very important day in the Kelly house…My oldest turns 12 today and my middle guy turns 10 today! Yes, I am aware that it’s really weird to have to have two kids born on the same day. But get this…they were born 14 minutes apart. 2 years and 14 minutes apart. Now that’s REALLY strange! And super cool. At least that’s the spin I try to make.
They both get to choose what they want for their special birthday breakfast. my 12 year old chose my Overnight French Toast Casserole and my 10 year old chose my Pumpkin Protein Pancakes (with chocolate chips of course!) Being that they have to share their special day, I overcompensate to make them each feel exceptional today.
That is a perfect example of mom guilt right there.
Side note: I hurt my back last week like really, really bad. I have a bad back as it is, but this was by far the worst one yet. So me scrambling around, shopping for balloons, decorations and ingredients for their cakes and breakfast didn’t go so well when I could barely stand up straight. But I got through it. And I am so excited to celebrate with my little guys.

Monday
Ratatouille Lasagna from Flavor the Moments.
Prep Tips: The ratataouille sauce may be made in advance and stored in the fridge for a few days or a month in the freezer. The entire dish may be assembled in advance and baked off before serving!
Tuesday
Creamy Sundried Tomato and Chicken Pasta from greens & chocolate.
Prep Tips: this meal comes together really quickly! You could make the sauce ahead of time, if you’d like.
Wednesday
Roasted Autumn Squash Soup from Spoonful of Flavor.
Thursday
Whole Grain Pasta with White Beans and Tomatoes from Hip Foodie Mom.
Friday
One Dish Salsa Chicken Pasta Bake from Lauren Kelly Nutrition.
This simple dish takes 10 minutes to prepare. You can omit the chicken if you’d like for vegetarian option.
