I can’t believe October is here.  September has become such a busy month that I am excited to start October! I love wearing sweaters and boots and making (healthy) comfort foods and pumpkin baking.  Let’s not forget the red wine…

This weekend will be quiet over here.  Some activities got cancelled due to rain yesterday (YAY!) so I plan on hunkering down later and cooking a big dinner for my family.  What are your weekend plans?

I think you are going to love this week’s meal plan!  I have my eye on  that Butternut Squash, Leek and Gruyere Galette.  It just screams fall to me.

Thursday

Leek and Potato Soup from Hip Foodie Mom.

Prep Tips: If you are not lactose intolerant, you can use heavy cream in place of the Lactaid (lactose-free cow’s milk). With heavy cream, I start with just a ½ cup. Feel free to add more if desired.
