We’re mixing things up this week with a scrumptious Berry Green Buddha Bowl and a delicious Kale and Cheddar Mac and Cheese, just to name a few of the amazing recipes on this week’s Healthy Meal Plan.
I am just loving all of the color of the recipes in this week’s meal plan. One of my small, short-term goals for 2017 is to eat more of a variety of colors each day. And I don’t mean colors like the ones in Fruity Pebbles, I am talking about those gorgeous, vibrant colors in wholesome fruits and veggies.
This week’s meal will not disappoint. The more colorful, the better. That Buddha bowl alone is so colorful and gorgeous. I am very excited to cook this week (if you couldn’t tell already! 😉 )
Last week I didn’t do so well with my “color goal”. I realized half way through the week that I was only eating greens and not really much of anything else. So I made my Creamy Vegetable Soup and ate that for lunch and even dinner for the rest if the week. I added whatever vegetables I had in the house and that made me feel better.
It’s funny, when you aren’t conscious of something as small as eating more colors, you could be eating the same, boring, colorless foods every day. Now I know!
