I can’t believe it’s the middle of January already.  I know I am always saying that but I am really feeling it right now.  I have been back on my meal prep train so January is looking great so far.

Isn’t it amazing how much better you feel when you eat healthy, exercise, sleep well and are organized??

This week’s meal all look so good! I keep making the Sweet Potato Noodle Egg Tacos (from my friend Kelly’s cookbook!) and I think this week I am going to make the squash boats first. Who’s with me??
