Vegetarian Pasta e Fagioli, Butternut Squash and Bacon Macaroni and Cheese and Quinoa Vegetable Soup are just a few of the dishes in this week’s healthy meal plan!
This week is all about comfort food.
Comfort food can be so many different things to different people. For instance, that Quinoa Vegetable Soup is 100% comfort food to me. Now don’t get me wrong, I eat soup all year long, but this one is hearty (healthy) and filling. And that Pasta e Fagioli looks so comforting, doesn’t it?
Side note: Pasta e Fagioli is my all time favorite soup. Ever. But why do they always have to throw pancetta in there? I get it, that’s the classic way to prepare it, but enough already! I don’t want pancetta! And I can’t wait to make this one.
This week’s dishes are all warm and comforting, because let’s remember, fall is here!
Monday
Butternut Squash and Bacon Macaroni and Cheese from greens & chocolate.
Prep Ahead: You can roast the butternut squash and cook the bacon in advance.
Tuesday
Skillet Fajita Chicken and Rice from Spoonful of Flavor.
Wednesday
Vegetarian Pasta e Fagioli from Hip Foodie Mom.
Thursday
Quinoa Vegetable Soup from Lauren Kelly Nutrition.
Prep Ahead: You can chop the veggies ahead of time.
Friday
BBQ Pulled Chicken Smoked Mozzarella Sliders from Flavor the Moments.
Prep Ahead: The pulled chicken may be made in advance and stored in the fridge or even frozen until ready to heat and serve!
Don’t forget the handy grocery list! Man, is this a life saver!
I told you this week’s theme was comfort food! The weather will (hopefully) be getting cooler and I predict more soups and stews in the future! What will you make first?
