Did you know that more than 49 million Americans struggle with hunger and 1 in 5 kids is food insecure. What exactly is food insecure?

Whether they live somewhere where healthy, fresh food is scarce or they just don’t have the financial means to afford it, they aren’t getting the proper nutrition they need.  Pacific Foods is on a mission to donate 50,000 meals to families in need under their new program, #NourishEveryBody, by donating one meal for every post tagged @pacificfoods and #NourishEveryBody and shared on Instagram, Twitter or directly to their Facebook page.

Everyone deserves access to good nutrition, right?  It seems like most people these days are taking pictures of their meals, why not use Pacific Foods products (which I already do) and simply use the hashtag NourishEveryBody?  

For every picture with that hashtag, Pacific Foods will deliver a healthy meal to a family that’s food-insecure. I love that Pacific Foods wants to help those in need and I am thrilled to be a part of it.

Pacific Foods is also donating 3-day Nourish Every Body food boxes to schools in some of Portland’s neediest communities.   Check out all of the goodies in those boxes!

The best part of this chicken salad?  There’s no mayonnaise in it! All of the creamy goodness comes from plain Greek yogurt which also adds protein.  

This salad might look unhealthy, but it’s extremely nutritious.

Healthy Chicken Salad

Ingredients

  • 6 ounces plain Greek yogurt
  • 1 11.8 ounce container Pacific Food Diced Chicken
  • 1 stalk celery diced
  • 1/4 cup onion diced
  • 1/4 cup walnuts chopped
  • 1/4 cup dried cranberries
  • 1 apple diced

Instructions

  1. Mix all of the ingredients together in a large bowl until thoroughly combined.
  2. Serve immediately or store in an air tight container for up to 4 days in the refrigerator.

Easy, healthy and delicious.  There’s so much to love here in this chicken salad.  Apples are in-season right now and cranberries are very fall-like, aren’t they?

My husband eats his chicken salad on a sandwich or on crackers.

 Me?  I love it in a big bowl of spinach!

    OK this just made my day! I eat chicken salad sandwiches about four days a week because I love it so much and find it to be a great post workout meal. And always on toasted wheat. Knowing that I can substitute greek yogurt for the mayo never even crossed my mind. Brilliant! (I probably should pick up your greek yogurt cookbook) Anyway cant wait to make this. And kudos to Pacific Foods for their compassionate and generous program. Very nice indeed.

    What a great program by Pacific Foods! Pacific Foods products are regularly in our pantry and fridge and it’s good to know that they are going the extra mile to deal with childhood hunger. This chicken salad looks like the perfect lunch option!
