It’s back to school time! I know many parents are looking for healthy after school snacks so I’ve collected some of my favorites!

I probably say this every year, but I can’t believe summer is over. I had one of the best summers I’ve had in a long time. My youngest will be 5 in a few days (gasp!) and I feel like I finally got to the place where I am not running after my kids constantly. The pool wasn’t as horrific as years past. With three boys, I’ve left the pool in an ambulance with one kid, one kid fell in the baby pool and needed stitches, one slipped on the cement and had a concussion. Oh wait, that’s the same little boy. Sigh… Not only is he turning 5 this week, but we survived the summer accident-free! Well, almost. He was trying to perfect his back flip off the diving board and scraped his back really bad. Let’s just say, he makes me very nervous at the pool. And now he’s off to kindergarten. Sniff-sniff… where did the time go?
It’s not only back-to-school for the kids, but it’s back-to-routines and schedules for the kids and parents too! I need to get back on track with my preparation of snacks and meals and being organized is so important. I can’t wait to make these snacks for my kids!
The picture above is of my Apple Pear Nachos (straight from The Everything Wheat-Free Diet Cookbook!) and it’s one of my favorite after school snacks ever. It’s so easy to make and the kids love it! What is your favorite healthy after school snack for the kids? I’m always looking for new ideas. Although I will miss my kids and the beautiful days of summer, I know I will enjoy the quiet and getting back to work. Happy back to school, parents!;)

My kids have been back to school for a couple of weeks now, and afterschool snacks are always the first thing they’re looking for when they walk through the door! These nachos are so fun. We love apples w/ pb and raisins, so I know these would be welcomed with open arms.

Sounds like you have some pretty typical boys! They must keep you busy at all times! However coming home to apple nachos sounds good!
