All of your healthy favorites in one easy dessert! Packed with antioxidants, protein ad fiber this Green Tea Matcha Chia Pudding Parfait is healthy enough for breakfast and delicious enough for dessert.

You all know that I love my green tea.  I also adore my chia pudding.  

This is exactly how this recipe came together. It wasn’t all that exciting.

I thought, why not put them together?  It’s a match made in heaven.

I added pineapple and coconut because it’s easy and delicious and a little tropical, but go ahead and use whatever fruit you’d like.  Layer them into parfaits or mix them all together.  

I sweetened this with the maple syrup which I made optional, but the matcha (which is simply finely ground green tea powder) is a little bitter and I think the maple syrup offsets it perfectly.

It’s definitely a personal preference. Go ahead and use what you like, or try it both ways.

EDITED TO ADD:

Since I have cut out sugar in my diet in the past 5 years, I have also added a little liquid Monk fruit in place of the maple syrup and it was fantastic. I also omitted the pineapple and used blueberries instead because they have much less sugar.

I like to make these on my meal prep days (usually Sundays in my house) and have them ready and waiting for me in my refrigerator. This saves so much time and makes it so convenient for busy mornings.

Let’s be honest, some days you just don’t want to think about what to have for breakfast, or you’re just too tired. On those days, have these parfaits ready for you.

The best part of this? It’s so insanely healthy!

Green tea matcha powder is loaded with antioxidants (which fights off the harmful free radicals), vitamins and minerals.  Studies show that consuming matcha can strengthen your immune system, boost energy, improve mental clarity (who couldn’t use help with THAT?) along with helping in maintaining heart health.

Chia seeds are packed with the powerful omega-3-fatty acids, antioxidants, fiber and protein.  Studies show that consuming chia seeds may help lower the risk of heart disease and Type 2 Diabetes.

Bottom line?  Eat this.  It’s crazy good for you.

Green Tea Matcha Chia Pudding Parfait

Course Breakfast, brunch, lunch, meatless
Servings 2 sarvings

Ingredients

  • 1 cup unsweetened almond milk
  • 2 teaspoons 100% maple syrup, optional
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon green tea matcha powder
  • 4 tablespoons chia seeds
  • pineapple chunks and unsweeteend coocnut for topping

Instructions

  1. Place the first four ingredients in a blender and blend for 30 seconds.

  2. Pour into a bowl and stir in chia seeds. Mix well and cover with a lid.

  3. It may look watery, but allow it to sit overnight (or at least a few hours) for it to thicken.

  4. After it thickens, arrange in layers for parfait. Enjoy!

    To be honest, I’m still trying to find a chia pudding I really enjoy… I think it’s a texture thing, maybe? Anyway, I do love me some green tea and pineapple and coconut, so maybe this is the pudding that’ll finally change my mind. ๐Ÿ™‚ Love that pretty bright green colour!

    I know you said the maple syrup is optional but maple syrup is never optional to me…haha ๐Ÿ™‚ This little parfait looks so delicious and the perfect use for the matcha that has been sitting up in my pantry.
