We moved into our new house and everything is going really, really well. The kids adjusted surprisingly quickly and we are still getting settled.  We were in our other house for over 15 years so I anticipated it being much more difficult.  I think because I love my new house so much, any of those nostalgic feelings and memories were overshadowed by pure excitement.

This has been a long time coming for the Kelly family. 5 years ago my husband was laid off for over two years. It was a painful, stressful time for us. The only saving grace was that we were saving to buy a house and we had a bunch of money saved.  Although we were disappointed that our new house would have to be on hold for now, we felt so fortunate to have that savings. I was working too ( I wrote both of my cookbooks during that time!) but it was just plain old hard.  My husband landed a great job and we got back on our feet again and we were able to start saving.

I feel beyond grateful.

It’s really starting to feel like “home”.  Don’t get me wrong, there are still lots of boxes and we barely have furniture (I wanted new furniture and never had the time to shop for it between travel baseball, being away in Cooperstown, NY for a week and moving.)  I just want to take my time and not rush.  The problem is I have never been good at that. Sigh.

The only little glitch in all of this? My kitchen.  And that’s kind of a big deal for someone who cooks all the time and it’s their job.

There’s just not enough storage.

At all.

I knew I was going to renovate in the next 6 months or so, but I’ve decided to start earlier than that.  I am  trying to get ideas on houzz and pinterest but the biggest obstacle is my indecisiveness.  There are SO many pretty kitchens out there! How could I possible decide??? Well, now I have even less time.  We start renovations in a MONTH! But I am up for the challenge!

Now that baseball is over, I have put a halt on the organizing and unpacking (for now) so we can all enjoy what’s left of summer.  I did get a new stove that I LOVE so I started cooking again.  My kids especially missed all of my cooking and baking but it’s not that easy to turn on the oven (even if it’s brand new and gorgeous!) when it’s ridiculously hot outside.  That’s where these babies come in to the mix…

I still need easy recipes.  Let’s be honest, it won’t be until my kids go back to school that I can really create recipes again. But this one was so easy, I just had to share!

I think most of you know by now that I have started to increase the healthy fats in my diet.  There has been some studies showing that eating more of healthy fats can help me with my intestinal condition so once I heard that, I immediately jumped on.  I will do anything to prevent what happened to me a year and a half ago (and almost 7 years before that!). With these additional healthy fats that I am incorporating in my diet, I am watching my carbs and I eliminated sugar from my diet.  It hasn’t been easy ( and I wasn’t even a huge sugar eater!) but sugar is in almost everything.

I love stevia and have been using it for a long time now.  But I was also using unrefined sugars such as maple syrup, honey and coconut sugar.  Since I was trying to eliminate sugar completely, I started using stevia more regularly.  Stevia is a plant that has been around for a long time. It is typically 200 times more sweeter than sugar so a little goes a long way.  Stevia doesn’t raise blood sugar levels so it’s perfect for diabetics.

I don’t consume stevia daily though.  I don’t put anything in my tea and only use it when I want to make a sweet treat, like these.  And man are these good!

I love using Now Foods Vanilla Stevia. It adds that subtle, aromatic vanilla taste with the hint of sweetness.  And there are times when we just want something sweet!

Frozen Yogurt Almond Butter Cups

Servings 9 -12 yogurt cups

Ingredients

  • 3 cups full fat plain Greek yogurt
  • 1 1/2 teaspoons Now Foods French Vanilla Stevia
  • 1/4 cup natural almond butter
  • 2-3 tablespoons gluten free dark chocolate chips for topping optional

Instructions

  1. In a medium sized bowl, mix together the Greek yogurt and stevia until throughly combined.
  2. Add almond butter and stir again until swirly.
  3. Spoon yogurt mixture into molds (or muffin tins) and freeze for 2-3 hours until frozen solid.

    Recipe looks very good. If you have not moved too fast on your kitchen, may I recommend all drawers instead of bottom cabinets. We did that and it is so much easier to get things in the back. You do need deep drawers but believe me they are worth it.

    Congratulations on the move. I’m so jealous you’re renovating. My kitchen needs it badly. It’s the same one my parents’ picked out over 40 years ago. *sigh*

    I absolutely LOVE this recipe. I didn’t know Stevia made this kind of product. Where have I been? I need to buy some and make this immediately!!

    Recipes just in time for Thanksgiving events. Always need the bite size munchies so cooking main dishes don’t need rushing.

    Good luck with the moving in and developing the kitchen. Everyone loves a manageable kitchen that saves time for our busy lives. Enjoy exploring all kinds of ideas. My cabinet doors are limited with much my “drawers” and it made sense for my lifestyle. Thanks Nancy for mention of that element. Worked well for me. And if cabinet doors already in place, there are pull out shelving that could help there.

    My family celebrates our Christmas at the Thanksgiving time. This gives the children time to spend special time with their children for Christmas Santa Clause and their church traditions.
