I wish I had my act together and had this ready for Meatless Monday, but Meatless Tuesday will have to do. I don’t eat much meat and I am always looking for new meatless recipes!

I love the creativity of these meals! Simply because you are vegetarian, doesn’t mean you have to eat plain veggie burgers or pasta. These dishes think outside the box and create all different types of meals beyond your typical boring salad. You don’t always need to eat meat to get protein. There are numerous non-meat sources of protein. I can’t wait to make these!
My favorite meatless dish is my Vegetable Parmesan Quinoa in the Slow Cooker. It is so easy to make (I mean, who doesn’t love their slow cooker??) and it’s super delicious. Quinoa is a gluten-free seed that is a complete protein (meaning that it contains all of the essential amino acids). You can use whatever vegetables you like in this dish, but these are my favorite! And a little Parmesan goes a long way so you can use it sparingly. I know, I am not the norm since I am not a cheese lover, so go ahead and add extra of you want to!
