Parmesan Spinach Balls

I love this appetizer because it’s easy and it’s a guaranteed crowd pleaser.  I have taken an old recipe and made it healthier by reducing bread crumbs and butter, adding some almond meal (added protein and less carbohydrates) and added some ground flax seed (added fiber, protein, antioxidants and vitamins).  These do have butter and cheese in them which adds to the richness.  I’ve brought these to many people’s houses and rarely are there any left! :)

I’m looking for healthy recipes that I can use to make sausage in casings. It seems like this would be a good fit. would use garlic instead of the onion. Since I haven’t made this, what do you think?

I didn’t notice the 2 cloves of garlic. My daughter can’t eat onion. Guess I’ll just leave it out. What I was asking is do you think this would do well in sausage casings.

Oh I am sorry, I bet sausage would be great. I would just chop them pretty small. I bet my family would love these with sausage, thanks for the tip :) Let me know how they turn out!
