I figured with the Trader Joe's Peanut Butter Recall going on, now is the best time to share with you how EASY it is to make your own peanut butter! For those who have a Vitamix, it's not just easy, it's ridiculously easy. I added some ground flax seeds to add fiber and antioxidants. The beauty of this is that you can add whatever you like to it... honey, salt, oil, other nuts or seeds. You can use different nuts like almond or cashews, or even use two of them together! Ok, now the recipe...
Ingredients
2 cups roasted peanuts, either salted or unsalted
1 tablespoon ground flax seed
THAT'S IT!
*If you use raw peanuts instead of roasted peanuts, you must add 4 teaspoons of peanut oil (or oil of your choice)
Instructions
1. Place peanuts and flax into Vitamix, other high speed blender or food processor.
2. Turn blender or food processor on the highest setting until all peanuts are completely blended.
* Vitamix users: Turn machine on then slowly bring to Variable 10, then switch to High. Make sure you use the the tamper (or spoon) to scrape the sides of the Vitamix to make sure all the peanuts are well blended to desired consistency.
** Other blender or food processor users: If you don't have a temper, make sure you stop the machine and thoroughly scrape the sides to get all the peanut mixture well blended to desired consistency.
3. Spoon peanut butter out of blender and store in air tight container in the refrigerator. Completely unprocessed. Makes about 1 ½ cups of peanut butter. ENJOY 🙂

My wife used to get a commercial smooth peanut with flax seed. It had 6 grams of carbs and 6 grams of fiber for a net carb count of 0! Perfect for her Atkins diet and mytype 2 diabetes.
