I don’t know about you, but my kids had off two days last week and I didn’t get to finish my meal prep. So I thought to myself, I’ll do it next week. Guess what?
They are off two more days this week. Again.
I have to do a better job of planning ahead during these weeks. My kids are just so busy that it’s nearly impossible! Does anyone else struggle with this?
I am making this chowder tomorrow because it’s super easy. I will make the chicken breasts in the morning to save on prep later. It’s hearty and delicious! My kids love it too! And I will make time for that Red Lentil Coconut Curry Stuffed Spaghetti Squash! Doesn’t it look incredible?
